Curry Boba Delight

1In a large pot, bring 4 cups of water to a boil. Add the tapioca pearls (1 cup) and cook according to package instructions, usually about 30 minutes, stirring occasionally to prevent sticking.

2Once the boba is cooked, drain and rinse under cold water to stop the cooking process. Set aside.

3In a separate saucepan, combine the coconut milk (2 cups), curry powder (1 tablespoon), brown sugar (1 tablespoon), vanilla extract (1 teaspoon), and salt (½ teaspoon). Heat over medium heat, stirring until the mixture is well combined and warmed through, about 5 minutes.

4In serving bowls, add a portion of the cooked boba. Pour the warm curry coconut milk (2 cups) mixture over the boba until they are submerged.

5Top with diced mango (½ cup) and pineapple for a refreshing contrast. Garnish with fresh mint leaves for added flavor and presentation.
