Festive Christmas Lecse

1In a large pot, heat the vegetable oil (2 tablespoons) over medium heat. Add the chopped onion (1 large) and minced garlic (2 cloves), sautéing until the onion (1 large) becomes translucent.

2Add the diced pork (2 cups) to the pot and cook until browned on all sides, about 5-7 minutes.

3Stir in the diced red and green bell peppers, cooking for an additional 3-4 minutes until they soften.

4Add the chopped tomatoes (2 medium), sauerkraut (2 cups), paprika (1 tablespoon), caraway seeds (1 teaspoon), black pepper (1 teaspoon), and salt (1 teaspoon) to the pot. Mix well to combine all the ingredients.

5Pour in the water (1 cup), bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, stirring occasionally, until the pork is tender and the flavors meld together.

6Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley (1 tablespoon).
