Savory Pork with Honey-Glazed Carrots

1.Preheat your oven to 400°F (200°C).

2.In a small bowl, mix together honey, soy sauce, minced garlic, grated ginger, dried thyme, salt, and pepper to create a marinade.

3.Place the pork tenderloin in a large resealable plastic bag or a shallow dish and pour the marinade over it. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

4.While the pork is marinating, prepare the carrots. In a large skillet, heat olive oil over medium heat. Add the sliced carrots and sauté for about 5 minutes until they start to soften.

5.Add the chicken broth to the skillet with the carrots and bring to a simmer. Cook for an additional 10 minutes until the carrots are tender and the broth has reduced slightly. Stir in a little more honey if you prefer them sweeter, and season with salt and pepper to taste. Remove from heat and set aside.

6.Once the pork has marinated, remove it from the bag and place it in a roasting pan. Pour any remaining marinade over the pork.

7.Roast the pork in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

8.Remove the pork from the oven and let it rest for 5-10 minutes before slicing.

9.Serve the sliced pork alongside the honey-glazed carrots, drizzling any remaining sauce from the roasting pan over the top.
