Savory Chicken Apple Sausage and Spinach Rice Bake

1Preheat your oven to 375°F (190°C).

2In a medium saucepan, combine the rice (1 cup) and chicken broth (2 cups). Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice (1 cup) is cooked and the liquid is absorbed. Remove from heat and set aside.

3In a large mixing bowl, combine the cooked rice (1 cup), sliced chicken apple (2) sausage, shredded roast chicken, (1) chopped spinach, beaten eggs (2), honey (2 tablespoons), flour (½ cup), and pesto (¼ cup). Mix well until all ingredients are evenly incorporated. Season with salt and pepper to taste.

4Grease a baking dish with olive oil. Pour the mixture into the prepared baking dish, spreading it evenly.

5Sprinkle the shredded cheese (1 cup) on top of the mixture.

6Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese (1 cup) is bubbly and golden brown.

7Once done, remove from the oven and let it cool for a few minutes before serving.
