Spiced Potato and Macaroni Bake

1Preheat your oven to 375°F (190°C).

2In a large pot, bring salted water to a boil. Add the macaroni (2 cups) and cook according to package instructions until al dente. Drain and set aside.

3In a skillet, heat the olive oil (2 tablespoons) over medium heat. Add the chopped onion (1 large) and sauté until translucent, about 5 minutes.

4Add the diced potatoes (2 large) to the skillet and cook for another 10 minutes, stirring occasionally, until they start to soften.

5Stir in the all spices (1 tablespoon) and salt (1 teaspoon), mixing well to coat the potatoes (2 large) and onions evenly. Cook for an additional 5 minutes.

6In a large mixing bowl, combine the cooked macaroni (2 cups), sautéed potato and onion (1 large) mixture, and torn bread pieces. Mix until well combined.

7Transfer the mixture to a greased baking dish. If using, sprinkle the grated cheese (1 cup) on top.

8Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and crispy.

9Remove from the oven and let it cool for a few minutes before serving.
