Savory Vegetable and Cheese Frittata with a Zesty Lemon Dressing

1Preheat your oven to 375°F (190°C).

2In a large mixing bowl, whisk together the eggs (4 large) and milk (1 cup) until well combined. Season with salt and pepper to taste.

3In a large oven-safe skillet, heat a tablespoon of olive oil over medium heat. Add the diced sausage (1 cup) and cook until browned, about 5 minutes.

4Add the diced tomatoes (1 cup), cucumber, and grated carrot (1 cup) to the skillet. Sauté for another 3-4 minutes until the vegetables are slightly softened.

5Pour the egg and milk (1 cup) mixture over the sautéed vegetables and sausage in the skillet. Stir gently to combine.

6Sprinkle the shredded cheese (1 cup) evenly over the top of the frittata mixture.
