Lemon Basil Ricotta Beef Bake

1.Preheat your oven to 375°F (190°C).

2.In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

3.Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 7-10 minutes. Drain any excess fat.

4.Stir in the diced tomatoes, lemon juice, and lemon zest. Season with salt and pepper to taste. Let it simmer for about 5 minutes to combine the flavors.

5.In a mixing bowl, combine the ricotta cheese, eggs, and chopped basil. Mix until well combined and season with a pinch of salt and pepper.

6.In a greased baking dish, layer half of the beef mixture on the bottom. Spread half of the ricotta mixture over the beef, then layer half of the pepperoni slices on top. Repeat the layers with the remaining beef, ricotta, and pepperoni.

7.Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.

8.Let it cool for a few minutes before slicing and serving.
