Savory Egg and Onion Sandwich with Ghee

1.Heat 1 tablespoon of oil in a skillet over medium heat.

2.Add the thinly sliced onion to the skillet and sauté until they are golden brown and caramelized, about 5-7 minutes. Stir occasionally to prevent burning.

3.In a bowl, crack the eggs and whisk them until well combined. Season with salt and pepper to taste.

4.Push the caramelized onions to one side of the skillet and pour the whisked eggs into the other side. Scramble the eggs gently until they are cooked through, about 3-4 minutes.

5.Once the eggs are cooked, mix them with the caramelized onions in the skillet and remove from heat.

6.Spread 1 tablespoon of ghee on one side of each slice of bread.

7.In a separate skillet, toast the bread slices on medium heat, ghee side down, until they are golden brown and crispy, about 2-3 minutes per side.

8.Once the bread is toasted, remove it from the skillet and spread ketchup on the non-ghee side of two slices.

9.Divide the egg and onion mixture evenly between the two slices with ketchup, then top with the remaining slices of bread, ghee side up.
