Spicy Potato Bread Delight

1.In a large mixing bowl, combine the mashed boiled potatoes, chopped onion, chilli flakes, salt, and mixed herbs. Mix well until all ingredients are evenly incorporated.

2.Take a slice of bread and spread a generous layer of tomato sauce on one side.

3.Spoon a portion of the potato mixture onto the tomato sauce-covered side of the bread, spreading it evenly.

4.Sprinkle some finely chopped green chillies on top of the potato mixture for an extra kick.

5.Top with another slice of bread to create a sandwich.

6.Repeat the process for the remaining slices of bread and potato mixture.

7.Heat a non-stick skillet over medium heat and add a little oil if desired.

8.Place the sandwiches in the skillet and cook until golden brown on one side, about 3-4 minutes. Flip and cook the other side until golden and crispy, about another 3-4 minutes.

9.Remove the sandwiches from the skillet and let them cool slightly before slicing them in half.

10.Serve warm with extra tomato sauce on the side for dipping.
