Tropical Pineapple Delight Sweets

1.Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.

2.In a large mixing bowl, combine the finely chopped pineapple and granulated sugar. Let it sit for about 10 minutes to allow the juices to release.

3.Add the melted butter, vanilla extract, and salt to the pineapple mixture and stir until well combined.

4.In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add this dry mixture to the wet ingredients, stirring until just combined.

5.Fold in the shredded coconut and chopped walnuts (if using) until evenly distributed.

6.Pour the batter into the prepared baking dish and spread it evenly.

7.Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

8.Remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

9.Once cooled, cut into squares and dust with powdered sugar before serving.
