Quick Microwave Vanilla Custard

1.In a microwave-safe bowl, combine the milk, granulated sugar, cornstarch, and a pinch of salt. Whisk until the cornstarch is fully dissolved and the mixture is smooth.

2.Microwave the mixture on high for 2 minutes. Remove from the microwave and whisk thoroughly to prevent lumps.

3.In a separate small bowl, lightly beat the egg yolks.

4.Gradually add a small amount of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs and prevent them from curdling.

5.Pour the tempered egg yolk mixture back into the remaining milk mixture, whisking continuously.

6.Return the bowl to the microwave and heat on high for 1 minute. Remove and whisk again.

7.Continue microwaving in 30-second intervals, whisking after each interval, until the custard thickens to your desired consistency. This should take about 2-3 more minutes.

8.Once thickened, stir in the vanilla extract.

9.Allow the custard to cool slightly before serving, or refrigerate for a chilled dessert.
