Decadent Chocolate-Covered Fries

1.Preheat your oven to 425°F (220°C).

2.Wash and peel the russet potatoes, then cut them into thin fry shapes, about 1/4 inch thick.

3.Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

4.Drain the fries and pat them dry with a clean kitchen towel.

5.Spread the fries in a single layer on a baking sheet lined with parchment paper. Drizzle with oil and sprinkle with sea salt, tossing to coat evenly.

6.Bake in the preheated oven for 30-35 minutes, flipping halfway through, until they are golden brown and crispy.

7.While the fries are baking, prepare the chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

8.Once the fries are done baking, remove them from the oven and let them cool for a few minutes.

9.Dip each fry into the melted chocolate, allowing any excess chocolate to drip off. Place the chocolate-covered fries back on the parchment paper.

10.While the chocolate is still wet, sprinkle the fries with powdered sugar, crushed nuts, or sprinkles if desired.

11.Let the chocolate set for about 10-15 minutes at room temperature or place them in the refrigerator for quicker setting.

12.Serve the decadent chocolate-covered fries warm or at room temperature, and enjoy this sweet and savory treat!
