Spicy Tomato and Onion Popcorn Chips

1.In a large pot, heat the vegetable oil over medium heat. Add the popcorn kernels and cover the pot with a lid. Shake the pot occasionally until the popping slows down, about 3-4 minutes. Remove from heat and set aside.

2.In a separate pan, heat a little oil over medium heat. Add the sliced onions and sauté until they are golden brown and caramelized, about 10-12 minutes. Stir occasionally to prevent burning.

3.Once the onions are caramelized, add the diced tomatoes to the pan. Cook for an additional 5 minutes until the tomatoes soften and release their juices.

4.Stir in the lemon juice, ground coriander, chili powder, and salt. Mix well and cook for another 2-3 minutes to combine the flavors.

5.In a large bowl, combine the popped popcorn with the spicy tomato and onion mixture. Toss gently to coat the popcorn evenly with the mixture.

6.Finally, sprinkle the chopped fresh coriander leaves over the popcorn chips and give it one last gentle toss to combine everything.
