Savory Chicken Spaghetti with Avocado and Toasted Bread

1.Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

2.While the spaghetti is cooking, heat a cast iron skillet over medium heat. Add 1 tablespoon of olive oil.

3.Season the chicken breasts with garlic powder, paprika, salt, and pepper on both sides. Once the skillet is hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing.

4.In the same skillet, add the remaining tablespoon of olive oil and the diced onion. Sauté for about 5 minutes, or until the onions are translucent and slightly caramelized.

5.Slice the cooked chicken into strips and add it back to the skillet with the onions. Toss to combine and heat through for another 2 minutes.

6.Add the drained spaghetti to the skillet and toss everything together until well combined. Adjust seasoning with salt and pepper if needed.

7.While the spaghetti is being tossed, toast the slices of bread until golden brown. You can do this in a toaster or on a separate skillet.

8.To serve, plate the spaghetti mixture and top with sliced avocado. Serve with toasted bread on the side. Garnish with fresh parsley if desired.
