Crispy French Fries with a Gourmet Twist

1.Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick.

2.Soak the potato strips in cold water for at least 30 minutes to remove excess starch, then drain and pat them dry with paper towels.

3.In a large bowl, toss the dried potato strips with cornstarch, garlic powder, onion powder, smoked paprika, sea salt, black pepper, and cayenne pepper until evenly coated.

4.Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C).

5.Fry the potato strips in batches, being careful not to overcrowd the pot, for about 4-5 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

6.In a small bowl, mix together mayonnaise, Dijon mustard, lemon juice, and chopped parsley to create the zesty dipping sauce.

7.Serve the crispy fries hot with the gourmet dipping sauce on the side.
