Decadent Sugar Milk Mousse

1.In a small bowl, sprinkle the gelatin powder over the cold water and let it bloom for about 5 minutes.

2.In a saucepan over low heat, combine the sugar milk and unsalted butter. Stir until the butter is melted and the mixture is warm, but not boiling.

3.Remove the saucepan from heat and add the bloomed gelatin to the warm sugar milk mixture. Stir until the gelatin is completely dissolved.

4.In a mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

5.Gently fold the warm sugar milk mixture into the whipped cream, adding the vanilla essence and salt. Use a spatula to combine until smooth and airy, being careful not to deflate the whipped cream.

6.Once combined, pour the mousse mixture into serving glasses or bowls and refrigerate for at least 2 hours, or until set.

7.Serve chilled, optionally garnished with whipped cream or fresh fruit.
