Fruity Strawberry Shortcake Delight

1.Preheat your oven to 350°F (175°C).

2.In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Mix well.

3.Add the softened butter, milk, eggs, and 1 teaspoon of vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until the batter is smooth and well combined.

4.Pour the batter evenly into two greased 9-inch round cake pans.

5.Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.

6.While the cakes are cooling, prepare the strawberries. In a medium bowl, combine the sliced strawberries with 1/4 cup of powdered sugar. Toss gently and let them sit for about 15 minutes to release their juices.

7.In another bowl, whip the heavy cream with 1 teaspoon of vanilla extract until soft peaks form. Be careful not to overwhip.

8.Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of whipped cream over the top, followed by half of the macerated strawberries.

9.Place the second cake layer on top and repeat the process with more whipped cream and the remaining strawberries on top.
