Spicy Mada Masala Delight

1.Rinse the mada thoroughly under cold water and soak it in water for about 30 minutes to soften.

2.In a large pot, heat the oil over medium heat. Add the finely chopped onion and sauté until it turns golden brown.

3.Add the slit green chilies to the pot and sauté for another minute to release their flavor.

4.Stir in the vanager spice blend, red paprika powder, and garam masala. Cook for 2-3 minutes until the spices are fragrant.

5.Drain the soaked mada and add it to the pot. Stir well to coat the mada with the spice mixture.

6.Pour in enough water to cover the mada by about an inch. Season with salt to taste.

7.Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the mada is tender and cooked through.

8.Once cooked, check the consistency. If it's too thick, add a little more water and stir well. Adjust seasoning if necessary.

9.Serve hot, garnished with fresh cilantro if desired, alongside rice or flatbreads.
