Decadent Peanut Butter Cookies with a Chocolate Drizzle

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2.In a large mixing bowl, combine the creamy peanut butter, granulated sugar, egg, vanilla extract, baking soda, and salt. Mix until the ingredients are well combined and a dough forms.

3.Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

4.Flatten each cookie slightly with the back of a fork, creating a crisscross pattern on top.

5.Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The cookies will look soft but will firm up as they cool.

6.While the cookies are baking, prepare the chocolate drizzle. In a microwave-safe bowl, combine the semi-sweet chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.

7.Once the cookies are out of the oven, allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

8.Once the cookies are completely cooled, drizzle the melted chocolate over the top of each cookie using a fork or a piping bag for a more controlled drizzle.
