Savory Potato and Carrot Bake with Garlic

1.Preheat your oven to 375°F (190°C).

2.In a large mixing bowl, combine the sliced potatoes, carrots, and onions. Add the minced garlic, dried thyme, dried rosemary, salt, and pepper. Drizzle with olive oil and toss everything together until well coated.

3.In a separate bowl, mix the heavy cream with half of the grated cheese. Stir until combined.

4.In a greased baking dish, layer half of the potato and carrot mixture evenly across the bottom.

5.Pour half of the cream and cheese mixture over the first layer, spreading it evenly.

6.Add the remaining potato and carrot mixture on top, followed by the rest of the cream and cheese mixture.

7.Sprinkle the remaining grated cheese on top of the final layer.

8.Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

9.After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the vegetables are tender.

10.Once done, remove from the oven and let it cool for a few minutes before serving.
