Whiting Fish Tacos with Sweet Corn and Green Bean Slaw

1Preheat your grill or a skillet over medium-high heat.

2In a bowl, combine the whiting fish fillets (1 lb) with cumin (1 tsp), paprika (1 tsp), garlic powder (½ tsp), salt, and pepper. Toss to coat the fish evenly with the spices.

3Place the seasoned whiting fish (1 lb) on the grill or skillet and cook for about 3-4 minutes on each side, or until the fish is flaky and cooked through. Remove from heat and set aside.

4In a separate bowl, mix together the sweet corn (1 cup), green beans, (1 cup) red cabbage, (½ cup) cilantro (¼ cup), and lime (1) juice. Season with salt and pepper to taste. This will be your slaw.

5Warm the corn tortillas (8 small) on the grill or in a dry skillet for about 30 seconds on each side until they are pliable.

6To assemble the tacos, place a portion of the flaky whiting fish (1 lb) on each tortilla, top with the sweet corn (1 cup) and green bean slaw, and add slices of avocado (1) on top.

7Serve immediately with extra lime (1) wedges on the side for squeezing.
