Spicy Egg Curry with a Twist

1.Hard boil the eggs in a pot of water for about 10-12 minutes. Once cooked, cool them under cold running water, peel, and set aside.

2.In a large skillet, heat the vegetable oil over medium heat. Add the finely chopped onions and sauté until they turn golden brown, about 5-7 minutes.

3.Add the minced garlic to the skillet and sauté for another 1-2 minutes until fragrant.

4.Stir in the chilli powder, turmeric powder, meat masala, and coriander powder. Cook the spices for about 2 minutes, stirring constantly to prevent burning.

5.Pour in the tomato sauce, soya sauce, and chilli sauce. Mix well and let the sauce simmer for about 10 minutes, allowing the flavors to meld together. Stir occasionally.

6.Season the sauce with salt to taste. If the sauce is too thick, you can add a little water to reach your desired consistency.

7.Gently add the boiled eggs to the sauce, making sure they are well coated. Simmer for an additional 5 minutes to heat the eggs through and allow them to absorb the flavors of the sauce.

8.Remove from heat and garnish with fresh coriander leaves before serving.
