Hearty Veggie and Mozzarella Chicken Bake

1.Preheat your oven to 375°F (190°C).

2.Prepare a baking dish by lightly greasing it with olive oil.

3.In a shallow bowl, combine the maida, garlic powder, onion powder, Italian seasoning, salt, and pepper.

4.In another bowl, beat the eggs until well mixed.

5.In a third bowl, place the breadcrumbs.

6.Take each chicken breast and dip it first into the flour mixture, then into the beaten eggs, and finally coat it with breadcrumbs, ensuring an even layer on all sides.

7.Heat olive oil in a large skillet over medium heat. Sear each breaded chicken breast for about 3-4 minutes on each side until golden brown. They do not need to be fully cooked as they will finish baking in the oven.

8.Once all chicken breasts are seared, place them in the prepared baking dish. Top each breast with a generous amount of mixed seasonal veggies and then sprinkle the shredded mozzarella cheese on top.

9.If desired, drizzle marinara sauce over the chicken and veggies for added flavor.

10.Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

11.After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown and the chicken is cooked through (internal temperature should reach 165°F or 75°C).

12.Remove from the oven and let it rest for a few minutes before serving.
