Cheesy Salami and Pepperoni Calzone

1.In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well.

2.Add the warm water and olive oil to the dry ingredients. Stir until a dough begins to form.

3.Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

4.Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

5.While the dough is rising, prepare the filling. In a bowl, mix together the mozzarella, ricotta, Parmesan, pepperoni, salami, and Italian seasoning until well combined.

6.Preheat your oven to 425°F (220°C).

7.Once the dough has risen, punch it down and divide it into two equal portions.

8.Roll out each portion into a circle about 10 inches in diameter on a floured surface.

9.Spoon half of the cheese and meat mixture onto one half of each dough circle, leaving a border around the edge.

10.Fold the other half of the dough over the filling to create a half-moon shape. Press the edges together to seal, and crimp with a fork for a decorative touch.

11.Beat the egg in a small bowl and brush it over the top of each calzone for a golden finish.

12.Place the calzones on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
