Savory Onion and Egg Pasta Bake

1.Preheat your oven to 375°F (190°C).

2.Cook the pasta according to package instructions until al dente. Drain and set aside.

3.In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 15-20 minutes. Stir in the minced garlic, thyme, oregano, and red pepper flakes, cooking for an additional 2 minutes until fragrant.

4.In a large mixing bowl, whisk together the heavy cream, eggs, salt, and black pepper until well combined.

5.Add the cooked pasta to the skillet with the caramelized onions and garlic, mixing well to combine.

6.Pour the egg and cream mixture over the pasta and onion mixture, stirring gently to ensure everything is evenly coated.

7.Fold in the grated Parmesan cheese and half of the shredded mozzarella cheese, mixing until well distributed.

8.Transfer the pasta mixture into a greased 9x13 inch baking dish, spreading it out evenly. Top with the remaining mozzarella cheese.

9.Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.

10.Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped fresh parsley.
