Sweet Potato and Parsnip Delight

1.In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

2.Add the minced garlic and sauté for an additional minute until fragrant.

3.Stir in the diced sweet potatoes and parsnips, cooking for about 5 minutes, stirring occasionally.

4.Add the ground cumin, ground coriander, smoked paprika, salt, and pepper. Stir well to coat the vegetables with the spices.

5.Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the sweet potatoes and parsnips are tender.

6.Once the vegetables are tender, remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth.

7.Return the pureed soup to the pot and stir in the coconut milk. Heat gently over low heat until warmed through, about 5 minutes.

8.Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
