Spicy Pork and Rice Cake Stir-Fry

1.Soak the rice cakes in warm water for about 30 minutes to soften them, then drain and set aside.

2.In a large skillet or wok, heat the olive oil and rapeseed oil over medium-high heat.

3.Add the sliced onion to the skillet and sauté for 2-3 minutes until they become translucent.

4.Increase the heat to high and add the pork slices to the skillet. Stir-fry for about 5-7 minutes until the pork is cooked through and slightly browned.

5.Add the softened rice cakes to the skillet and stir well to combine with the pork and onions.

6.In a small bowl, mix together the soy sauce, oyster sauce, ketchup, sesame oil, chili flakes, salt, and pepper.

7.Pour the sauce mixture over the stir-fry and toss everything together to ensure the rice cakes and pork are well coated in the sauce.

8.Continue to stir-fry for an additional 3-4 minutes until everything is heated through and the flavors meld together.

9.Serve hot, garnished with additional chili flakes if desired.
