Maggie Noodles with a Savory Pizza Sauce Twist

1Boil 4 cups of water in a pot and add the Maggie noodles (2 packs). Cook for 2 minutes until they are slightly soft, then drain and set aside.

2In a large skillet, heat the olive oil (1 tablespoon) over medium heat. Add the mixed vegetables and sauté for about 3-4 minutes until they are tender.

3Add the ginger-garlic paste (1 teaspoon) to the skillet and sauté for another minute until fragrant.

4Stir in the pizza pasta sauce (1 cup) and soy sauce (1 tablespoon), mixing well to combine with the vegetables. Let it simmer for 2-3 minutes.

5Add the cooked Maggie noodles (2 packs) to the skillet, tossing them gently to coat with the sauce and vegetables. Cook for an additional 2 minutes to heat through.

6Stir in the vegetable mayonnaise (2 tablespoons), mixing until the noodles are creamy and well combined. Season with salt, pepper, and red chili flakes if using.

7If desired, sprinkle grated cheese on top and let it melt slightly before serving.
