Hearty Potato and Salmon Skillet

1.Heat the olive oil in a large skillet over medium heat.

2.Add the diced potatoes to the skillet and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden and tender.

3.Add the chopped onion and minced garlic to the skillet. Sauté for another 3-4 minutes until the onion is translucent.

4.Stir in the smoked paprika and dried dill, mixing well to coat the potatoes and onions.

5.Add the salmon chunks and shrimp to the skillet, gently folding them into the mixture. Cook for about 5-7 minutes until the salmon is cooked through and the shrimp are pink and opaque.

6.Pour in the vegetable broth and lemon juice, stirring to combine. Allow the mixture to simmer for an additional 2-3 minutes to heat through and meld the flavors.

7.Taste and adjust seasoning with more salt and pepper if needed.

8.Remove from heat and garnish with fresh parsley before serving.
