Spicy Potato and Green Pepper Skillet

1.Heat the olive oil in a large skillet over medium heat.

2.Add the chopped onion and minced garlic to the skillet, sautéing until the onion becomes translucent, about 3-4 minutes.

3.Add the diced potatoes to the skillet, stirring well to coat them in the oil and onion mixture.

4.Season the potatoes with salt, pepper, smoked paprika, chili powder, cumin, and cayenne pepper. Stir to combine.

5.Cover the skillet and cook the potatoes for about 10-15 minutes, stirring occasionally, until they start to soften.

6.Add the sliced green bell peppers to the skillet, mixing them in with the potatoes.

7.Continue to cook for another 5-10 minutes, uncovered, until the potatoes are tender and the peppers are slightly softened.

8.Taste and adjust seasoning if necessary, adding more salt or spices to your liking.

9.Once cooked, remove from heat and garnish with fresh parsley before serving.
