Christmas Coconut Fruit Dream Cake

1Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

2In a large mixing bowl, cream together the softened butter and granulated sugar (1 cup) until light and fluffy, about 3-4 minutes.

3Add the eggs (3 large) one at a time, mixing well after each addition. Then stir in the vanilla and almond extracts.

4In a separate bowl, whisk together the flour, baking powder (1 teaspoon), baking soda (½ teaspoon), and salt (¼ teaspoon).

5Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk (1 cup). Mix until just combined.

6Fold in the shredded coconut, mixed dried fruits (1 cup), and chopped nuts (½ cup) until evenly distributed throughout the batter.

7Pour the batter into the prepared cake pan and smooth the top with a spatula.

8Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

9Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

10Once cooled, dust the top with powdered sugar if desired, and slice to serve.
