Savory Bacon and Vegetable Bread Bake

1.Preheat your oven to 180°C (350°F).

2.In a large skillet, heat the coconut oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.

3.In the same skillet, add the diced kumara, carrots, and cauliflower. Sauté for about 5-7 minutes until they start to soften. Season with salt and pepper to taste.

4.In a large mixing bowl, combine the sautéed vegetables, crispy bacon, and chopped lettuce. Mix well to combine all the ingredients evenly.

5.In another bowl, whisk together the milk and melted butter. Add salt and pepper to taste.

6.Layer the bread slices in a greased baking dish, overlapping them slightly. Pour half of the milk mixture over the bread, allowing it to soak in.

7.Spread the vegetable and bacon mixture evenly over the bread layer. Pour the remaining milk mixture on top, ensuring all the bread is moistened.

8.Sprinkle the shredded cheese generously over the top of the dish.

9.Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the bread is golden brown.

10.Remove from the oven and let it cool for a few minutes before serving.
