Oven-Baked Spinach and Feta Pasta Casserole

1.Preheat your oven to 180°C (350°F).

2.In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.

3.In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

4.Add the minced garlic and cook for an additional minute until fragrant.

5.Stir in the diced tomatoes and cook for about 3-4 minutes until they start to soften.

6.Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, pepper, oregano, basil, and red pepper flakes if using.

7.In a large mixing bowl, combine the cooked pasta, spinach mixture, crumbled feta cheese, heavy cream, and milk. Mix well until everything is evenly coated.

8.Transfer the pasta mixture into a greased baking dish and spread it out evenly. Top with grated mozzarella cheese.

9.Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

10.Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

11.Once done, remove from the oven and let it cool for a few minutes before serving.
