Rustic Tomato and Potato Bake

1.Preheat your oven to 375°F (190°C).

2.In a large mixing bowl, combine the sliced tomatoes, potatoes, and onions. Add the minced garlic, dried oregano, dried thyme, dried basil, olive oil, salt, and pepper. Toss everything together until the vegetables are well coated with the oil and herbs.

3.In a greased baking dish, layer half of the potato mixture evenly on the bottom.

4.Sprinkle half of the Parmesan cheese over the first layer.

5.Add a layer of sliced tomatoes on top of the potatoes, followed by a layer of onions.

6.Repeat the layering process with the remaining potato mixture, Parmesan cheese, and then top with the remaining sliced tomatoes and onions.

7.Sprinkle the shredded mozzarella cheese evenly over the top layer of tomatoes.

8.Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

9.After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and the potatoes are tender when pierced with a fork.

10.Once done, remove from the oven and let it cool for a few minutes before serving.

11.Garnish with fresh basil leaves before serving.
