Pork Tenderloins with Blackberry Vinegar

1.Dry pork tenderloins and season with salt and pepper.

2.Heat 1 tbsp oil in a pan over medium heat.

3.Brown pork on each side and remove from pan.

4.Add 3 tbsp minced shallots and 1/4 tsp dried tarragon to the pan.

5.Cook for 3 minutes, stirring occasionally.

6.Add 1/3 cup blackberry vinegar and bring to a boil.

7.Simmer until mixture reduces by half.

8.Return pork to the pan and heat for 1 minute, turning to coat with sauce.
