Coconut Christmas Delight

1.Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with ghee.

2.In a large mixing bowl, combine the grated coconut, rice flour, sugar, salt, baking powder, and cardamom powder. Mix well until all dry ingredients are evenly distributed.

3.In another bowl, whisk together the coconut milk and water until well combined.

4.Gradually pour the wet mixture into the dry ingredients, stirring continuously until you achieve a smooth batter.

5.Fold in the mixed nuts and dried fruits, ensuring they are evenly distributed throughout the batter.

6.Pour the batter into the prepared cake pan and smooth the top with a spatula.

7.Drizzle the melted ghee over the top of the batter for added richness and flavor.

8.Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

9.Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

10.Once cooled, slice the cake and serve it on a festive platter, garnished with additional nuts and dried fruits if desired.
