Spicy Chicken Biryani Delight

1.Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.

2.In a large pot, heat the cooking oil over medium heat. Add the cumin seeds and whole spices (cardamom, cloves, cinnamon) and sauté for a minute until fragrant.

3.Add the sliced onions to the pot and cook until they are golden brown, stirring occasionally.

4.Stir in the minced garlic, grated ginger, and slit green chilies. Sauté for another 2 minutes until the raw smell disappears.

5.Add the chopped tomatoes and cook until they soften and the oil starts to separate from the mixture.

6.In a bowl, mix the chicken pieces with yogurt, coriander powder, garam masala, turmeric powder, red chili powder, and salt. Add this marinated chicken to the pot and cook for about 10-15 minutes until the chicken is browned and cooked through.

7.Add the drained basmati rice to the pot and gently mix it with the chicken and spices, being careful not to break the rice grains.

8.Pour in 4 cups of water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for 20 minutes until the rice is cooked and has absorbed all the water.

9.After 20 minutes, turn off the heat and let the biryani sit covered for another 10 minutes to allow the flavors to meld.

10.Fluff the biryani gently with a fork, then garnish with chopped cilantro and mint leaves before serving.
