Savory Citrus Brined Chicken

1.In a large mixing bowl, combine the orange juice, lemon juice, lime juice, brown sugar, kosher salt, black peppercorns, garlic powder, onion powder, crushed red pepper flakes, thyme, and rosemary. Whisk until the sugar and salt are fully dissolved.

2.Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the citrus brine over the chicken, ensuring that all pieces are submerged. Seal the bag or cover the dish with plastic wrap.

3.Refrigerate the chicken in the brine for at least 2 hours, or up to 8 hours for maximum flavor and tenderness.

4.Preheat your grill or oven to medium-high heat (about 375°F/190°C).

5.Remove the chicken from the brine and discard the brine. Pat the chicken dry with paper towels to ensure a good sear.
