Curried Elbow Pasta Delight

1.Bring a large pot of salted water to a boil. Add the elbow pasta and cook according to package instructions until al dente. Drain and set aside.

2.In a large skillet, heat the oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

3.Add the diced tomatoes to the skillet and cook until they soften, about 5 minutes.

4.Stir in the coriander powder, chili powder, turmeric powder, salt, and pepper. Cook for another 2 minutes to allow the spices to bloom.

5.Pour in the toned milk and bring the mixture to a gentle simmer, stirring occasionally.

6.Add the cooked elbow pasta to the skillet and mix well to coat the pasta with the creamy curry sauce.

7.Remove from heat and stir in the mayonnaise and ketchup until well combined. Adjust seasoning if necessary.

8.Serve hot, garnished with fresh coriander leaves.
