Mahi Mahi Florentine Delight

1.In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

2.Season the mahi mahi fillets with salt, black pepper, and red pepper flakes (if using). Place the fillets in the skillet and cook for about 4-5 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove the fillets from the skillet and set aside on a plate.

3.In the same skillet, add the fresh spinach and sauté for 2-3 minutes until wilted. Pour in the heavy cream, lemon juice, and lemon zest, stirring to combine. Bring the mixture to a gentle simmer.

4.Allow the cream sauce to thicken slightly, about 3-4 minutes. If desired, stir in the grated Parmesan cheese for added richness and flavor.

5.Return the mahi mahi fillets to the skillet, spooning the creamy spinach sauce over the top. Cook for an additional 2 minutes to heat through.

6.Serve the mahi mahi fillets warm, drizzled with the lemon-infused cream sauce and garnished with extra lemon zest if desired.
