Crispy Beer-Battered Onion Rings

1Peel the onions (2 large) and slice them into 1/4-inch thick rings. Separate the rings and set them aside.

2In a large mixing bowl, combine the flour, baking powder (1 teaspoon), paprika (½ teaspoon), garlic powder (½ teaspoon), onion powder (½ teaspoon), cayenne pepper (¼ teaspoon), salt, and pepper. Mix well to combine all the dry ingredients.

3Gradually pour in the cold beer (1 cup) while whisking the mixture until you achieve a smooth batter. The batter should be thick enough to coat the onion rings but still pourable.

4In a separate shallow dish, place the breadcrumbs (½ cup). This will be used for the final coating of the onion rings.

5Heat vegetable oil in a deep frying pan or pot over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, the oil is ready.

6Dip each onion ring into the beer batter, allowing any excess to drip off, then coat it in the breadcrumbs (½ cup), pressing gently to adhere the crumbs to the batter.

7Carefully place the coated onion rings into the hot oil, frying them in batches to avoid overcrowding. Fry for about 3-4 minutes or until they are golden brown and crispy, turning them halfway through for even cooking.

8Once cooked, remove the onion rings from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with additional salt if desired.

9Serve the crispy beer-battered onion rings hot with your favorite dipping sauce.
