Decadent Mocha Layer Cake

1.Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

2.In a large mixing bowl, combine the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well combined.

3.Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth.

4.Stir in the boiling water and cooled coffee until fully incorporated. The batter will be thin, but that's okay!

5.Divide the batter evenly among the three prepared cake pans.

6.Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.

7.While the cakes are cooling, prepare the mocha frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing until combined.

8.Add the heavy cream, vanilla extract, and instant coffee granules. Beat on high speed for 3-4 minutes until the frosting is light and fluffy.

9.Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of mocha frosting on top.

10.Add the second layer of cake and repeat the frosting process. Place the third layer on top and frost the top and sides of the entire cake with the remaining mocha frosting.

11.Garnish the top of the cake with chocolate shavings and coffee beans for an elegant touch.

12.Slice and serve this decadent mocha layer cake to indulge in rich chocolate and coffee flavors.
