Spicy Tomato and Onion Bread Bake

1.Preheat your oven to 375°F (190°C).

2.In a large mixing bowl, combine the diced tomatoes, chopped onion, minced garlic, chili powder, coriander powder, olive oil, salt, and pepper. Mix well until all the ingredients are evenly coated.

3.Cut the bread into cubes and add them to the tomato and onion mixture. Gently toss to ensure the bread absorbs the flavors.

4.In a separate bowl, whisk together the eggs and milk until well combined. Pour this mixture over the bread and vegetable mixture, stirring gently to combine everything.

5.If using, sprinkle the grated cheese on top of the mixture for added flavor and richness.

6.Transfer the mixture into a greased baking dish, spreading it out evenly.

7.Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the bread is crispy.

8.Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh coriander leaves before serving.
