Coconut Curry Sauce

1.Sauté onion, ginger, garlic, serrano, and salt in olive oil in a large sauté pan over medium heat until onion is translucent, about 5 minutes.

2.Add curry powder and cook 30 seconds more.

3.Increase heat to high.

4.Stir in broth and preserves, and cook until mixture thickens, about 6 minutes.

5.Add coconut milk, simmer 6 minutes more, then finish with lime juice.

6.Transfer sauce to a blender and puree until smooth.
