Quark Puff Pastry Cake

1.Separate the eggs (they should be at room temperature).

2.Mix the egg yolks with sugar, pudding powder, and quark (using a whisk or hand mixer).

3.Beat the egg whites with a pinch of salt until stiff and gently fold into the mixture.

4.Use a roll of puff pastry from the fridge for the base, cut it to the size of the springform pan, and line the edges with the trimmed pastry scraps.

5.Pour the filling onto the base.

6.If using puff pastry in slices, layer them and roll out with some flour.

7.Bake the cake in a preheated oven: first 20 minutes at 200°C (top and bottom heat), then another 35 minutes at 170°C (reduce 20°C for convection).

8.If the surface browns too much, cover with baking paper.
