Savory Omurice Delight

1.In a skillet, heat 1 tablespoon of cooking oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent and fragrant, about 2-3 minutes.

2.Add the cooked chicken, frozen peas, and carrots to the skillet. Stir-fry for another 2-3 minutes until heated through.

3.Add the cooked rice to the skillet and pour in the soy sauce and ketchup. Mix everything together, cooking for an additional 3-4 minutes until the rice is heated and well combined. Season with salt and pepper to taste. Remove from heat and set aside.

4.In a separate bowl, beat the eggs with a pinch of salt and pepper until well combined and slightly frothy.

5.Wipe the skillet clean and add the remaining tablespoon of cooking oil. Heat over medium-low heat.

6.Pour the beaten eggs into the skillet, swirling to coat the bottom evenly. Cook for about 2-3 minutes, or until the edges start to set but the center is still slightly runny.

7.Spoon the fried rice mixture onto one half of the omelette. Gently fold the other half over the filling to create a half-moon shape. Allow to cook for another minute to ensure the inside is warm and the omelette is fully set.

8.Carefully slide the omurice onto a plate. Drizzle with additional ketchup on top before serving.
