One-Pan Banana Coke Sponge Cake

1.Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

2.In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined. Set aside.

3.In another mixing bowl, beat the eggs and sugar together using an electric mixer on medium speed until the mixture is thick and pale, about 5 minutes.

4.Add the melted butter, Coca-Cola, vanilla extract, and mashed bananas to the egg mixture, and mix until combined.

5.Gradually add the dry flour mixture to the wet ingredients, alternating with the milk. Start and end with the flour mixture, mixing until just combined. Be careful not to overmix.

6.Pour the batter into the prepared baking pan and smooth the top with a spatula.

7.Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

8.Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully transfer the cake to a wire rack to cool completely.

9.Once cooled, you can frost and decorate the cake as desired or serve it plain.
