Pina Colada Cake

1.Knead all ingredients for the shortcrust pastry into a firm dough and chill for 30 minutes. Preheat the oven to 160°C fan.

2.Roll out the dough and place it in a greased springform pan (26 cm). Prick with a fork.

3.Drain the pineapple for the filling, heat briefly in a pan with rum flavoring, and place on the shortcrust pastry.

4.Fill the quark in a bowl. Separate the eggs and stir the egg yolk with the quark. Stir in sugar and vanilla sugar. Add flour, milk, and coconut cream and stir until smooth.

5.Beat the egg whites until stiff and fold them into the quark mixture. Then place this on the shortcrust pastry.

6.Bake the cake for 80 minutes, then let it cool for 5 minutes with the oven door open.

7.Sprinkle with cocoa powder after cooling.
