Spiced Egg and Cheese Toast Delight

1.In a bowl, crack the eggs and whisk them until well beaten. Add salt, pepper, red chili powder, turmeric powder, and garam masala to the eggs and mix well.

2.In a separate bowl, combine the mayonnaise and tomato sauce to create a creamy spread. Mix until smooth and set aside.

3.Heat a non-stick skillet over medium heat and add a little butter. Once melted, pour in the beaten egg mixture and scramble until just set, about 2-3 minutes. Remove from heat and stir in the chopped coriander.

4.Toast the bread slices in the same skillet until golden brown on both sides, adding more butter if necessary.

5.Spread a generous layer of the mayonnaise and tomato sauce mixture on each slice of toasted bread.

6.Top each slice with the scrambled egg mixture, ensuring an even distribution.

7.Sprinkle the grated cheese over the top of each toast.

8.Place the toasts back in the skillet and cover with a lid. Cook on low heat for about 2-3 minutes or until the cheese is melted and bubbly.

9.Remove from heat and serve immediately, garnished with additional coriander if desired.
