Crystal Clear Confection

1.In a medium saucepan, combine the sugar, water, and cream of tartar.

2.Heat the mixture over medium heat, stirring until the sugar dissolves completely.

3.Once dissolved, stop stirring and allow the mixture to boil until it reaches a temperature of 300°F (hard crack stage).

4.Remove from heat and let it cool slightly before adding food coloring and flavor extract, if desired.

5.Pour the mixture onto a parchment-lined baking sheet and let it cool completely until hardened.

6.Once cooled, break the candy into crystal-like pieces and enjoy!
